I made corned beef and cabbage yesterday. Pressure cooker method? Nope, just in a pot.

It's delicious either way, but I've found through experimentation that the pressure cooker method results in much more tender and flaky corned beef. I don't know if you like the beef coated with mustard, but the pressure cooker actually infuses the mustard into the beef - which I like a lot. I can't believe the cost of corned beef these days - it used to be considered a cheap meat to buy. Same thing with flank steak.

Here's a tidbit that something a lot of people who don't like me, will never get about me. I don't have to agree with your statements, your political alignment, your beliefs, your point of view, to be respected. It's not just you. The people who disrespect you because they disagree with you disrespect everybody who disagrees with them. Ultimately, they don't have any respect for themselves. It does, however, raise some interesting questions about just what...and who...is worthy of respect.... Do I respect pedophiles? Murderers? Thieves? People who are unwilling to reason? I don't respect a good many people, and it's not because they disagree with me, but because they just can't be bothered to investigate an issue before coming to a conclusion about it. The very worst possible thing I could ever say to anyone...the most insulting thing I can think of...is "you have no interest in finding the truth of the matter."

I don't know the "pressure cooker" method, but I like it boiled just fine. As long as I get a nice, lean flat cut, I'm good to go. I cannot stand the fat. It grosses me out. Thankfully, the meat is stringy, and after boiling for several hours, is easily separated from the fat. I actually prefer the meat to be tough(er) and chewy. I do like it with mustard. I got a nice cheapo organic dijon, and it went well with it.

I don't have a real problem respecting people. Respecting people is actually pretty easy. Liking people, that's hard.

You're making my mouth water. I like to get whole carrots in the mix too. Yeah, I always add potatoes and cabbage. The potatoes have to be Yukon gold or red to survive the boiling experience; the russets always tend to dissolve.

You guys aren't talking about this, are you...  I get the impression that's most people think of when they think "corned beef". That would be like Spam compared to a succulent baked ham. I don't see corned beef used that often in delis/restaurants other than for Reuben sandwiches.
