If getting a taco from a questionable-looking food truck, skip the sour cream/crema/any dairy product. I had a Hispanic ex-girlfriend who's mother is from the old country. She told me how she made the stuff- She'd take whole milk, heavy cream, and butter, heat it on a stove, pour it in a glass container w/lid and leave it out in the hot sun for a couple days.

How the hell do you guys think that stuff is made? cheese (all kinds) yogurt sour cream All of these are made with processes that, if you knew about it, would cause you to say "eew, gross". All perfectly safe for human consumption.

Yes, but most of those are all inoculated with certain bacteria that makes it not spoil. Just leaving cream or milk out for a while makes it go bad because of the lack of those certain bacteria.
