Start around 9:30 to skip all the intros & get right to some eel. Also interesting to note is Eastern Japanese style filleting of the eel v/s Western Japanese - in the West, cutting open from the belly is frowned upon as it seems to remind them of seppuku, so they cut from the back instead.
Even if I would never eat most of what was cooked on those shows, it still fascinates me to watch them.

Have you ever watched the original Iron Chef? They used eel quite a few times, and it's very interesting watching them prep it. I like the "bone cutting", where they actually chop up the bones small enough so they can be eaten. Lots of calcium in those dishes... No, I've never been into cooking shows, but I can see why people are. This isn't just a cooking show - it's a battle! Japanese-style, but without (much) of the goofiness. The "chairman" Kaga is about the only goofy thing on the show.

No, I've never been into cooking shows, but I can see why people are. This isn't just a cooking show - it's a battle! Japanese-style, but without (much) of the goofiness. The "chairman" Kaga is about the only goofy thing on the show. It's a cooking show, now let me watch

That's really interesting how they comment on how each region prepares the dishes, learn a lot in just a few minutes

I'm not a fan of boiled potatoes either for some reason. I don't like big chunks of potatoes, but I love fries and mashed. Peas? Mushrooms... Peas Mushrooms RAW mushrooms!

Love peas and mushrooms. I should honestly be a vegetarian with all the vegetables I do like Can't live without meat though. Fish, venision, beef, pork, seafood of all kinds, sheep, lamb....I don't like goat. Then there is chicken, duck, partridge, ostrich (took me a little bit to get used to that) I like to try new things. It's been awhile though, the last new thing I got stuck on was unagi. BBQ eel, is YUMMY Never tried goat! Or ostrich come to think of it.

Never tried it. I started eating duck eggs once but quickly went off them. You can't beat a chicken egg... No jokes please.

Goat is tough and stringy, it's just a weird tasting meat, no real flavor but what flavor it does have, isn't pleasant. Ostrich is a different taste, not bad, but not really flavorful either.

I always felt the producers encouraged the guests to blab on. They talk A LOT... on the other hand, Mayuko Takata was always welcome as I just like to look at her. Megumi Ohishi too... look them up today and they look no older than they did when appearing on this show. Japanese women age amazingly well!

I think I might look for a download of this series, I love sushi and want to try other japanese food. Planning on going to Japan one day, this will give me an idea of what I should look for

I know the Food Network used to re-run these all the time late at night, but not so much anymore. Not sure what other Canadian station might have them, and I know that most episodes are on YT, but seem to be low-quality. I will say, Iron Chef Chinese Chen Kenichi made me actually want to eat tofu with his Mapo Tofu recipe. A spicy (fiery!) sauce with some ground pork in, stir-fried with the tofu... delicious!

I like tofu, or at least what I think is tofu We have one japanese restaurant here in town, it's called Mikado, but I believe it's probably more westernized than traditional
