I just pan-cooked some boneless, skinless chicken breasts.
Now I'm pressure-cooking some black beans.
Next I shred some Monterey Jack & dice some stewed tomatoes.
This will eventually all go in pan with lots of sriracha, and then into a flour tortilla.
Yes, I'm making burritos.

Occasionally I'll make a proper chicken gravy to go with it, just to change it up a bit. Nothing like rice coated in chicken gravy.
I've just finished the leftover chicken from Wednesday... In a sandwich with peri-peri sauce. You have to eat it straight after making it otherwise the sauce soaks into the bread and makes everything soggy.

Yesterday, Batwoman decided to take out several pieces of meat from the freezer, with the intention of having a good old cook up when she got home from work today. Unfortunately, she came home extremely tired after a heavy day and has gone to bed. Rather than let any of it go to waste, I'm currently cooking:-
- Pork mince with onions (fried).
- Green beans and rice (steamed).
- A chicken breast (grilled).
- A turkey thigh (roasted).
Some of it will be eaten tonight and the rest tomorrow. Definitely not going hungry this weekend.

I carved off most of the turkey thigh and kept it for today. That's the meat on the bone at the top.

Because of the heat here, I've had to shift my workouts and cooking to the crack of dawn.
Today I'm pressure-cooking a big batch of black beans, and pan-cooking some chicken breasts for later consumption.
I've already had my usual steel-cut oats for breakfast. Also mixed up a whey protein drink.

Because of the heat here, I've had to shift my workouts and cooking to the crack of dawn. Today I'm pressure-cooking a big batch of black beans, and pan-cooking some chicken breasts for later consumption. I've already had my usual steel-cut oats for breakfast. Also mixed up a whey protein drink. I can't imagine cooking in the heat you must get. It's currently 25C/77F here and it's too hot for me to be cooking (...but I am anyway).
Tonight was going to be bangers and mash until I peeled potato #1 of #2 in the cupboard and found it was bad. Not enough potato for mash. Now we're having boiled potato, grilled sausages, green beans (because we've run out of peas), and no carrots (because, guess why... yep).
Still, the upside is we get to have hot buttered crumpets for afters

Do you make your own crumpets? Unfortunately, no. I may have to soon seeing as Warburtons - who make the good ones - have reduced supply with the CO2 crisis.

I thought crumpets were yeast-free.

With the hotter weather, I'm back to making smoothies. So good. I use whey protein, frozen banana, sometimes some home-made frozen yogurt, frozen blueberries, and a little cinnamon. So, you got your protein, your fruit (sugar), and a healthy batch of antioxidants all in one delicious, refreshingly cool, tall glass of goodness. And I don't need no straw!
