Creamy horseradish in particular goes well with roast beef and some sausages. I've probably had Grey Poupon on a roast beef sandwich, though I'd prefer mayo if there's lettuce, tomato, etc.

I like cold roast beef sandwiches with nothing more than a little S&P and either yellow mustard or spicy brown mustard.
I will make hot "open-faced sandwiches"* with the beef shredded up in some of the gravy poured over the bread.
*Never liked the term "open-faced sandwich". Nothing is being sandwiched without the other slice of bread. But I don't know of anything better to call it, so I am stuck using an incorrect term. Sorry, /rant.
