You'll notice the volume increases and the weight decreases due to moisture loss. I use the weight loss % to zero in on my favorite roast characteristics, and also to ensure repeatability.
This setup does 1 lb. batches quite nicely. I tried 2 lbs, but felt it was straining the stirring mechanism too much for long-term use. First crack is around 6.5 minutes and second crack is around 9.5 minutes on high.

Does it taste different? Before Covid my parents used to travel to exotic far off places and pick up decent coffee, last one was from Panama

Does it taste different? Before Covid my parents used to travel to exotic far off places and pick up decent coffee, last one was from Panama Like night and day. The issue is oxidation. Coffee oxidizes and tastes nasty in a very short period of time after it is roasted. Sadly, it's almost impossible to buy non-oxidized beans or brewed coffee in the US.

I forget what the name of this coffee company in the U.S is (sadly not available in Canada) Death by Coffee or something have you tried it? Is oxidation like an acidic taste? I drink my coffee straight black generally, but if I go to coffee shops it's 2 cream 3 sugar. I'd really like to become like Quinten Tarantino was in pulp fiction (not the racist part) but the coffee guy part...

Oxidation is a little like an acidic taste, but it's actually oxygen causing the oil in the bean to go rancid. This is why a lot of people don't like coffee...mainly because they've never really had proper coffee before. I drink my coffee black too, although I like a good cappuccino now and then. My French Roast tastes like chocolate...so good.

They roast beans really well, but are only capable of small batches. You can pick one up at a thrift store for next to nothing, or about $20 from Target. They eventually burn out - I've gone through two of them myself. I get my green beans from Sweet Maria's. Here's a link that will get you started: library.sweetmarias.com/air-popcorn-popper-method-for-home-coffee-roasting/
